Purslane Tomato Salad

Margaret's Purslane Tomato Salad

Purslane & Tomato Salad

4 cups of Purslane leaves and chopped stems
2 cups cherry tomatoes, cut in half
½ bunch dill weed, chopped
I lemon juiced
1 avocado, mashed
Add sea salt to taste

Mix all together and serve for a delightful Summer salad!

Purslane
Purslane is the richest known plant source for Omega 3 acids which reduce blood cholesterol and pressure, and increases immunity, high in Vitamin C

Purslane Gazpacho

Here is another truly wonderful Purslane salad recipe is from Susun Weed.

In a big bowl put 6 cups chopped tomatoes
peel, gut, and chop 4 cups of cucumbers
Sprinkle a tablespoon of sea salt over this and put in the fridge overnight.
Just before serving, add 4 cups of chopped purslane, shredded basil and if you have it shiso leaves (really it takes it up a notch, its easy to grow and self seeds each year), two cloves of minced garlic, 2 tbs of fresh lemon juice or balsamic vinegar (either one) and a half cup of olive oil.
Serve cool and enjoy
