Spanakopita w/ Lambs Quarters
1 lb filo
1 lb cottage cheese
1 8 oz cream cheese
1 – 2 lb feta cheese
30 oz Lambs Quarter chopped and set aside
8 large eggs – beat and add rest of mixture
½ c farina (or cream of wheat)
1/4 cup parmesan cheese

Butter ½ the pyllo add the mix butter the remaining ½ of fillo and chill before baking. Butter one sheet at a time.
Cook 350 for 1 hour
Check for consistency
