Dandelion Salad

1/2 lb torn Dandelion greens

1/2 red onion chopped

2 tomatoes choppoed

hard boiled egg

1/2 t dried basil

salt and pepper

Hot bacon dressing

–  4 slices of bacon, chopped small
–  2 tablespoons of olive oil
–  2 tablespoons of apple cider vinegar
–  2 teaspoons of Dijon mustard
–  1 tablespoon of chopped onion or wild onion
–  1/4 teaspoon of finely chopped garlic or ramps
–  1 tablespoon of maple syrup
–  salt and pepper to taste

Fry the bacon until it’s crispy.  Remove and set aside.  Put all the rest of the ingredients into a blender and add 2 tablespoons of the bacon grease from your pan. Blend everything together.  Toss with Dandelion greens, eggs and tomatoes and top with cooked bacon.
