Flourless Maple Brownies
These are so simple and have a great chew factor! ENJOY! and let me know if tap your Maples to boil down for syrup.
2 ripe Yellow Plantains
¼ c Butter or melted Coconut oil if you want dairy free
¼ c Maple Syrup (tap your own!)
¼ c raw Cocoa Powder
1 t Baking Soda
1 t Vanilla Extract
½ t Cinnamon
½ t Salt
Optional (add nuts of choice, chocolate chips)
Preheat oven to 350F. Cut the ripe plantains into four sections. Toss everything in to a food processor. Blend until batter is smooth. Pour into a pie pan, or iron skillet to bake for 30 minutes.
