Stinging Nettle Frittata

Wild Frittata

10 eggs
cooked bacon crumbled
1 1/2 cups of milk (raw is best)
2 T of butter melted
1/2 t salt
1/4 t pepper
1/4 cup of chopped wild onion
2 cups stir fried Nettle (cooked in bacon grease)
1 cup shredded Cheddar cheese

1. Preheat oven
2.Whisk together eggs, milk, butter, salt and pepper.
3. Stir fry Stinging Nettle or other wild edible Spring Greens
4. Sprinkle with onions bacon and cheese
5. Pour egg mixture
6. Bake until golden and puffy and the centre feels firm and springy, 15-30 minutes depending on the number of eggs used

Nettle (Urtica dioica)
Nettle is one of the most nutritious wild plants. Nettle contains high amounts of calcium, magnesium, chromium, and zinc.

Extreme caution to be taken when harvesting Stinging Nettle.  Wear leather gloves, use tongs.  If you get stung have a Yellowdock leaf at the ready to rub out the sting.
