Wild Sauteed Stems for Flower Eggs

Dandelion leaves sauteed and shaped to help hold up this egg flower. Delicious!

I got this idea of poaching eggs in red pepper rounds from Catherine McCord at Weelicious. Here is her link: http://weelicious.com/2011/11/30/bell-pepper-egg-flowers/

I just add to this stir fried wild greens (in this case Dandelion) and shape them like the stems and leaves of a flower.  I’ve also made the stem from bacon and leaves from sauteed wild edibles.  These are so yummy and so nutritious!
